Tuna Can Sterilization Retort
This retort system combines steam sterilization with forced convection to ensure uniform heat distribution and highly efficient thermal processing. A powerful circulation fan forces steam to move rapidly inside the chamber, creating direct contact and even heat exchange between the heating medium and the packaged products. Unlike conventional systems, this design allows for controlled amounts of air to be present in the retort during sterilization. The pressure inside the chamber is regulated independently from the temperature by automatically introducing or releasing compressed air, ensuring optimal control for various packaging types and product formulations.
The retort system supports multiple processing stages, allowing precise sterilization cycles to be set according to specific requirements of different products and packaging formats.

The sterilization process begins by loading the products into the retort and securely closing the door, which is locked with a triple safety interlocking mechanism to ensure operational safety throughout the entire cycle.
Sterilization is fully automated based on recipes pre-programmed into the PLC microprocessor controller. The retort system applies direct steam heating without using any intermediary heat transfer media such as water, as found in spray-type systems. A high-powered circulation fan forces the steam into continuous movement inside the chamber, creating even steam distribution and accelerating heat exchange between the steam and the packaged food.
Throughout the entire process, pressure is automatically controlled by feeding or discharging compressed air through automated valves according to the set program. Since steam-air mixed sterilization allows the pressure to be regulated independently of temperature, the system can freely adjust pressure settings to match the specific packaging format of each product. This flexibility makes the retort highly adaptable to a wide range of packaging types, including three-piece cans, two-piece cans, flexible pouches, glass bottles, and plastic packaging.
